The low anthocyanin content and extraction rate in blueberry extract have obviously restricted the development of blueberry processing industry in China.

Therefore, the study on the extraction and purification technology of blueberry anthocyanin is of great significance to improve its added value and agricultural efficiency. In this study, the extraction process of blueberry anthocyanin was optimized by response surface methodology and purified by macroporous resin, hoping to obtain the best extraction and purification process and lay a foundation for its product development
